At this time every year the crops are all coming into fruition and ready for harvesting, the problem can be that we end up with a glut of sum crops. Whether this is accidental or intentional it still means that we must find a way to keep those crops edible as long as possible. In a lot of cases, these crops can be blanched and frozen and they will be good all year round. However, this is not always the case.

There are some products that cannot be frozen, so we have to look for other ways to preserve them for later consumption. This can be through pickling, chutney’s, relishes or preserves. So, what I have put together here are recipes that I use to extend the useable life of some crops.
